The History of Coffee Makers

It was love at first sip. Once man discovered the taste of coffee and the stimulating effect of caffeine on the body, he was hooked. The road to a quality coffee maker has been bumpy. Original coffee makers had a slight problem in that they occasionally blew up. Sometimes they burned the coffee.

According to some, women who ran houses of ill repute were among the first great coffee makers. In 1674, men were spending so much time drinking at local coffee houses that the women in England tried to outlaw coffee. Coffee makers in the 1600’s and 1700’s were designed in an array of styles, most featuring a fat bulge in an effort to help retain the coffee grounds when pouring out the coffee.

Some creative individual put coffee in a sock in an effort to contain the grounds in 1780. This heralded the birth of the Mr. Biggin coffee maker. The Mr. Biggin used a cloth filter. Coffee fans tried cotton, wool, burlap and other fabrics and materials to filter coffee. Cloth wasn’t working real well. In 1802, the metal coffee filter came into use.

The 1800’s were a time of rapid coffee maker development. Madame Vassieux of Lyons, developed a vacuum coffee maker. Madame Richard also created a vacuum style coffee maker. Vacuum and percolator coffee makers were widely used. In 1818, a Parisian metal smith invented the first coffee percolator. In America, the Cowboy Pot was the coffee maker of choice.

During the years of 1835 to 1850, many, many coffee makers are invented. Glass balloon coffee makers, vacuum system coffee makers, piston system coffee makers, pressure steamer coffee makers, a Naperian balancing siphon coffee maker and other coffee makers, roasters and grinders are invented.

The birth of the Manning-Bowman Percolator ocurred in 1890. House Furnishings Review magazine promoted the Cafetiere double blown-glass coffee maker. The Raparlier coffee maker featured a filter made of hemp. This style of Hydropneumatic coffee maker was used as late as the 1960’s.

Vacuum and percolator coffee makers continued to be created in different syles. Plunger filters were first introduced in the 1900’s. The principle is still applied to coffee makers today. Some say that it is virtually impossible to make a bitter cup of coffee with a plunger style coffee maker.

As the 1900’s progressed, Willy Brandl invented one of the first ever electric coffee makers. The major development in this case was the switch that automatically turned the coffee maker off when the liquid level was low.
Coffee filters as we know them today were born in 1912. Frau Benz invented Melitta coffee filter paper. Goodbye linen and cloth coffee filters. Hello paper. Easy to use and easy to get rid of.

The first true espresso machine arrived in 1946 when Achille Gaggia designed the first espresso machine that didn’t involve using steam. Within fifteen years, modern coffee makers using paper filters began to be used commercially. Bunn introduced the paper filter as it’s known today in 1957. The first ‘pourover’ coffee maker was introduced by Bunn in 1963.

Mr. Coffee was born in 1972. The automatic drip coffee maker hits store shelves and start showing up in homes and businesses everywhere. After Mr. Coffee signed Joe DiMaggio to be the company spokesman in 1974, Mr. Coffee became a household name.

When the price of coffee beans skyrocketed in 1977, Mr. Coffee created a coffee saver coffee maker that used less coffee. The first thermal coffee carafe is born around this time, giving coffee drinkers the ability to easily keep coffee hot for long periods. By 1979, timers appeared on coffee makers and have come a long way from the Cowboy Coffee Pot. It will be interesting to see how the machines evolve over the next hundred years.

How Healthy is Mexican Food

If you ask majority of Americans on when the last time they ate Mexican food, usually it is within the last week. Mexican foods have become very popular in the United States. The problem is that the Mexican foods in America are not the same as they are in Mexico. Americans have added super fat and super sized the meals. If you go down to Mexico, you may not even find the same dishes because the dishes were created in America. Authentic Mexican food is rich in fresh vegetables, protein, and nutritious vitamins and spices.

Taco Bell comes to mind as a popular food chain that serves Mexican foods. You will find tacos, burritos, and quesadillas. People in Mexico usually do not eat big platters of tortilla chips in their everyday meals. Because of the food sold in the United States, it is not very healthy. The Mexican foods in America are not as rich in nutrients. It contains high fat, sodium, and calories. It also does not include as many fresh vegetables.

Most traditional Mexican dishes have less fat and calories. This doesn’t mean you cannot enjoy the foods served in American restaurants. You can add more healthy foods to the dish. Tomatoes are high in vitamins and have lycopene which has cancer-fighting properties. Tomatoes can be added to many Mexican dishes. Beans carry high protein and fiber. Instead of eating the beans refried, try getting them whole. It cuts back on the fat. Corn is another vegetable that is healthy in Mexican foods. It is high in vitamins and contains fiber. Adding these to your Mexican dishes will make them healthier than what you are served at Taco Bell.

You may be wondering if people in Mexico eat healthier foods. In America we have the choice to go to health food stores where we can find organic foods and foods not as fattening. The only drawback is that not everyone can afford to buy these foods whenever they grocery shop. In Mexico, healthier choices are available. Each year the health food market in Mexico makes over $500 Million. The consumers make up 5 percent of Mexico’s population. Their age range is from 20 to 50 years old. They usually live in metropolitan areas and can afford to buy these types of healthier foods. If they cannot afford it, they still are not getting all the fats and calories that we find in American foods, especially fast-foods. Authentic Mexican foods still carry many vegetables and ingredients that are good for your body, and also the way the food is cooked is healthier.

You are probably wondering again, is Mexican food healthy for me. Authentic Mexican dishes are, because they carry many vitamins and are generally low in fat. America has fattened up the Mexican dishes making them not a good choice. If you want to go out to eat, try avoiding the major Mexican food chain restaurants. Find a restaurant that serves authentic dishes. It is healthier and will taste even better knowing you are giving your body good foods.

Popular Italian Food

When people think of popular Italian food they most likely think of spaghetti, lasagna, or tortellini. However, the popular Italian food in Italy is actually a little different and much more diverse.

A very popular Italian dish is the minestrone soup. This soup makes excellent use of one of the most popular ingredients in Italian food, beans. Beans are widely used in Italian food and are the feature ingredient in many soups, not just the minestrone. Along with beans are nuts as another popular ingredient. The main nut preferred for Italian food is the pine nut. This nut is used to not only accent pasta dishes, but also as a main ingredient in popular desserts. But, the most common and popular use of the nuts is in pesto sauce. Nothing says Italian food like a good pesto sauce.

Another popular Italian food ingredient is rice. By far the most popular use for this ingredient is in the signature Italian food dish of risotto. Here rice is mixed with broth, vegetables and spices to make a very unique and flavorful dish. Risotto is widely known as the most popular appetizer in Italian food and different regions take great pride in their individual risottos. Rice is also used in many different soups and stews throughout Italy.

The most ubiquitous of all popular Italian food ingredients is olive oil. The best olive oil is known as extra virgin olive oil and many Italian food chefs rely strictly on extra virgin olive oil. The difference between extra virgin olive oil and virgin olive oil is the acidity. In order to be classified as extra virgin the olive oil must not contain more than one percent acidity. Virgin olive oil on the other hand cannot have more than two percent acidity. Extra virgin olive oil is by far the most popular in Italian food where it is used not only to cook food in, but also as a dressing for salad and a dipping option for bread.

When discussing popular Italian food it is essential to talk about the most popular breads and pastries. Breads serve an important role in Italian food. They can be used as appetizers, sides to a meal, and desserts. The most popular breads are flavored with herbs, cheeses, and sun-dried tomatoes. An excellent dessert bread in Italian food is the biscotti which means “twice baked”. This popular dessert is more like a biscuit or cookie and is often flavored with almonds and spices. Fruit can be added to the biscotti and a popular choice is cherries. Biscotti are very versatile in Italian food, being served for breakfast with coffee or as an after dinner treat.

There is much more to Italian food than just pasta and sauce. Italian food is a cuisine of diversity. When traveling in Italy it is often amusing to see the stark difference between what Italian food is popular in America and what Italian food is popular in Italy. Southern Cooking Brings Soul to Food

I was born and raised in the heart of the Deep South. From as far back as I can remember I remember long summer afternoons spent drinking iced tea and shelling peas and butterbeans on my grandmother’s porch. I have moved on from my roots and have made my way into other regions of the world. One thing, however, that has remained constant in my life is my deep and abiding love for southern cooking and cuisine.

I was probably well into my teen years before I realized that tea could be served any other way than loaded with sugar and over ice. It was about that same time that I realized some folks would eat vegetables that hadn’t been soaked in batter, dredged in cornmeal, and deep fat fried. Southern cooking is not for the faint of heart though it can cause many hearts to grow faint. One thing that can be said is that you’ll never find anything else like it on earth.

People in the south learned to make do with little in many instances. Some of the poorest people in America live in the southern part of the country. Of course, you will find that many of these people despite their poverty are also among the most generous. The same can be said of food. It’s the one thing that seems to be in ample supply in most southern homes and very few will turn you away with an empty stomach.

Perhaps it’s the seasonings that are often used when cooking southern food. From the crab boil and gumbo file of Cajun Cuisine to the secret ingredient that almost every southern kitchen contains for their fried chicken recipes (and no one on earth can fry chicken like a born and bred southern grandma). Perhaps it’s the Sunday church dinners where everyone shares a little of what they have with others or the love that goes into preparing these meals that are shared with friends and family. Whatever the case may be, if you ever have the occasion to experience real southern cooking, do not pass it up. You might shave a day off your life, but a good southern fried chicken leg is really living and well worth the sacrifice if you ask me.

Of course it would be remiss to mention southern cooking without bringing up some of the more delicious desserts that seem to be perfection for the south. I mentioned banana pudding above but there are so many more. Pralines are a perfect for those living down around New Orleans as is bread pudding. A little to the east there are grandma’s who have taken their lemon icebox pie recipes to the grave with them so coveted were these delicious deserts and the same holds true for pecan pies as well. We should never forget the flavorful Mississippi Mud cake though, and so many other wonderfully delicious treats that southern cooking has introduced to the world at large.

Favorite vegetables in the heart of the south as I mentioned above included peas and butterbeans, snap beans, corn, summer squash (after all, it’s summer all year in the south), and okra (fried or boiled in many southern kitchens). Not all vegetables were deep fried though few were off limits. I remember eating my share of fried okra, fried squash, and yes, fried green tomatoes. Life was good back when calories weren’t counted and no one really worried about clogging arteries. While I wouldn’t make these a daily dish in any household, I certainly would recommend trying them out if you ever find the opportunity.

Another great thing about southern cooking is the wonderful fried seafood that seems to abound. From fried fish (almost any variety works well when it’s southern fried) to fried oysters, seafood just seems to taste so much better in the south. If you are hoping to learn some of the southern cooking and cuisine you will most likely need to order your spices and have them shipped unless your grocery store has a rather extensive ‘exotic’ foods selection. You can sometimes find great southern seasonings on the International food aisles in grocery stores as well. If you want to really treat your family to an outstanding meal, you should really try southern cooking for the night.

Mexico offers quite a few unique drinks. Some include fruits, and nuts while others include milk. Some are served warm, while others are chilled. These drinks have become a favorite in Mexico. There are traditional drinks, some of which originate from Spain.

Horchata is a drink that originates from Spain. It is very popular in Mexico. It is perfect for hot days. Nuts are used for this drink. They are ground and mixed with water, sugar and sometimes lemon juice. The mixture is then put through a filter process. The drink is served ice cold. It refreshes and cools down the drinker. Horchata is also popular with rice added. It can be found at Mexican restaurants in the United States along with Mexican grocery stores.

Aguas Frescas are another popular drink found in Mexico. It consists of water, fruit juices and sugar. Many vendors in Mexico sell Aguas Frescas. Flavors you may find are Watermelon, Mango, Pineapple, and Strawberry. These types of drinks are also made in other countries under different names.

In Mexico you will still find brands for soft drinks that are familiar in America, such as Coca Cola, Sprite, and Pepsi. They also have their own brands, on being Sidral, which is apple-flavored. Coffee is also another popular drink in Mexico. You will be able to find Espresso and cappuccino in the cafes. For something more exotic there is the drink, caf de olla. It is made by being stewed for hours with the ingredients being cinnamon and sugar, which gives it a sweet and rich flavor. Outside of the cafes, it is common to find people making instant coffee. Mexicans also enjoy tea. The tea of choice is usually mint or chamomile.

Mexico also offers many drinks of alcohol. One that is much known in America is the Margarita. Tequila is the alcohol in the drink. Margaritas come in a variety of flavors and colors. It is served with ice, or blended with ice making it a frozen drink. There are a few tales on who is the original maker of the margarita. It is known that people in the 1930s were enjoying these drinks. This drink is still popular to this day. Mexico also drinks beer. They have several brands, the biggest being Cerveza. Mexican-made brands that are popular in the United States include Corona and Sol. Pulque is a milky style beer that is popular amongst the poor. It is made from sap and is thick. It usually takes some time to get used to drinking. A drink that makes people think of Mexico is Tequila. It consists of agave cactus and is produced mainly in the Mexican state of Jalisco. It is served with a side of lime and salt.
