What is Tex-Mex Cuisine

Tex-Mex cuisine is a name used to describe dishes that are found in the state of Texas that is primarily American. It blends available foods in the United States with traditional Mexican cuisine. Some of the Tex-Mex foods may differ from actual Mexican dishes, but are still referred to Mexican dishes in Texas. People who live outside of Texas sometimes refer to Tex-Mex as Southwestern food.

Tex-Mex is considered “America’s oldest original cuisine” by some. Tex-Mex got its name back in 1875. It started when the Texas-Mexican Railway was nicknamed Tex-Mex to refer to the railroad and describe the Mexicans that were born in Texas. The mission era blended Texas foods with Spanish and Mexican. It got its name by the Tejanos (Hispanics born in Texas). The different regions of the state kept the foods similar to each other. Eventually other meats such as goat and cow’s head gained popularity. In the twentieth century, cheese was added because it was readily available and inexpensive in the United States.

More than 60% of the population of Texas has ancestors that were from Mexico. It is no surprise as to why that state has become popular for its Tex-Mex dishes. Tex-Mex is most popular in the South Central part of the state, which includes the cities of Austin and San Antonio. Tex-Mex dishes commonly use the ingredients of garlic, sour cream, cilantro, beans, avocado, and chorizo, which is a spicy Mexican sausage that originated from Spain. Chiles are also important in Tex-Mex dishes.

The chilies range from sweet and mild to hot fiery and are added to a variety of dishes. Some chiles that are used in Tex-Mex cuisine include ancho, jalapeno, and the hottest of them all, the habanero pepper. The food is contemporary and can easily be made. There are dishes that require more detail such as casseroles, black bean soup, and bunuelos, which is fried bread that is eaten with sugar and cinnamon that is sprinkled on the top.

Tex-Mex cuisine contains large amounts of beef, spices, and beans. Texas-style chili, crispy chalupas, and fajitas are all Tex-Mex originals. A serving of tortillas with hot sauce or salsa is another Texas invention. Other tasty creations include seven-layer dip, and tamale pie. Mango margaritas are a modern drink in the Tex-Mex menu.
Many of these recipes are simple and require little skill, but there are some foods that involve preparation of another recipe to complete the main dish.

One dish that is shouts Texas, is chili. It is a combination of meat and spices, with no beans added. Sauce is the main ingredient of the chili. Chili started by the Chili Queens of San Antonio. They made the chili to sell at stands for cowboys who came to the town.

A Few Cake Decorating Ideas

Did you know that the first cakes baked in America where small loaves of sweet bread? Look how far we have come. Home bakers should not be intimidated by the elaborate cakes being made today. You do not need to be a pastry chef to make beautiful cakes, you just need the know-how and practice. Of course the right tools will go a long way in your cake decorating endeavors. Here are a few ideas you might like to try.

Every cake worth merit starts with a smooth icing. The cake needs to cool completely before they are iced and decorated. To keep crumbs from ending up in your icing and ruining the look of your cake, start with a thin base coat of frosting that is not quite as stiff as the regular layer will be. Once this coat is on, set the cake in the refrigerator for 20 minutes. This will set the icing and any crumbs will be caught in this first layer. Now you can spread a regular layer of icing without worrying about crumbs.

Use an icing spatula to apply and smooth the second coat of icing. Once the icing is on the cake, start smoothing on the sides by running the spatula around the perimeter of the cake. One trick for smoothing the frosting is to dip the metal icing spatula in cold water, this will aid in smoothing the frosting. To smooth the top, dip the spatula in cold water and holding it horizontally over the top of the cake. Start at the point farthest from you, holding the spatula in both hands, skim the top of the icing by bringing the spatula straight toward you.

Simple Designs

Some cake decorators say learning to smooth the icing is the hardest part of cake decorating. Practice will make you a pro in not time. Once you have it down, show it off, even a cake without many decorations that is clean and smooth will make an perfectly elegant offering.

Instead of icing, cake tops can be dusted with powdered sugar. You can choose to use a stencil for a more decorated appearance, or just the powdered sugar for a clean look.

Edible decorations are a beautiful yet simple cake decorating technique. The use of sprinkles, candy, nuts, and coconut pressed into the icing before it sets, will make your cake stand out.

To apply a textured look for your cake decorating, use a small cardboard comb, available in baking supply stores.

Piping is achieved by using a pastry bag fitted with a metal tip that is held on by a coupler. This is your most important tool for cake decorating. You can make lines, words, shells, flowers, and many other designs on the top or sides of the cake. Fill the bag with no more than 1 cup of icing at a time, twist the top of the bag and keep steady pressure when piping the design. Use your other hand to guide the tip. It is wise to find out everything you can about piping before you begin.

Fondant a smooth white paste, is used in complicated cake decorating. Fondant is kneaded and rolled to cover cakes with a sleek smooth layer of icing. It is also used to make designs that are 3-D. It is less tasty than buttercream, but the cake will look sleek and elegant.

Summer Grilling

Summer time is the perfect time for barbequing. Not only is the temperatures perfect for outdoor activities, but often the children are out of school, and families are traveling for their summer vacations. Today in America, it is unheard of for a family to go a full summer without having or attending a barbeque cookout. Today, over 90% of families attend a barbeque at least once a year.

Summer is indeed the perfect time to plan a barbeque party. It is important to remember certain things when barbequing to ensure that your party goes flawless.

Grilling Dos and Donts

1. Always start with a completely clean grill. The amazing fish that you cooked last week was indeed tasty, but unless you want a hint of fish with your hot dogs, you need to clean your grill before cooking. It is recommended that you clean you grill each and every time you use it. Wait until it cools down, and then clean the surfaces with baking soda and the racks with grease fighting dish soap and water.

2. Before you begin cooking, spray your cooking area with a nonstick cooking spray. This will prevent your meat from sticking when you are rotating or removing it. If your meat sticks and tears, you will lose a large amount of juice, and your meat may dry out.

3. Never place food on the grill until the temperature is correct. The fluctuation in temperatures will cause your food to dry out or burn. If you are using a charcoal grill, make sure that the coals are completely gray before putting the meat on the grill. This will allow the temperatures to level out, and the majority of the lighter fluid to burn off.

4. While marinating before you cook will add flavor, covering your meat in barbeque sauces before cooking will dry your meat out, and may even cause it to burn. This happens because most barbeques sauces contain high amounts of fat and sugar, which burn really easy. Alternatively, lightly seasoning your meat will work well, and will not have any adverse effects. If you must use barbeque sauce, only add it in the final minutes before taking your meat off the grill. Just remember that meat has a natural flavor that is only brought out by barbequing, so you do not want to ruin that.

5. Searing you meat will lock in the juices and taste, but you do not want to cook your meat at that temperature for the whole amount of time. Once you have seared both sides, reduce the heat to medium. This will ensure that your meat is full of flavor and tender.

6. Once meat is cooked, never put it back in on the same plate you had it on when it was raw. This could cause the spread of many unwanted illnesses. Do not handle cooked meat with the same utensils that you used when it was raw.

7. Never poke you meat while it is cooking. Poking holes in meat will cause the juice inside to leak out into the bottom of the grill. Not only will this make your food dry and unappealing in the end, but it also could potentially ruin your barbeque grill. At the very least, it will cause a buildup of unwanted grease and juices on your grill, which will make cleanup harder.

Tiramisu – The Italian Food Dessert

Today Tiramisu is the most popular of Italian food desserts. It graces the menu of nearly every Italian food restaurant. However, its rise to fame has been meteoric; it wasn’t even invented until the 1970’s in the Veneto region of Italy. It didn’t even gain widespread popularity until the early 1990’s. It is a unique blend of ingredients that separately seem to not go together at all. However, when correctly blended together they form one of the treasures of Italian food.

The first ingredient is Mascarpone cheese. This cheese has very deep roots in Italian food. It was made as far back as the 13th century in the region of Lombardy. This cheese is concentrated milk cream and has a very high fat content, getting up to seventy-five percent. It is a smooth and creamy cheese. Traditionally it has been considered to be more of a winter dish and therefore shows up in more of the seasonal Italian food dishes. This is mainly because of its high calories and the fact that when it was first produced there was no refrigeration and this delicate cheese does not keep well in hot temperatures. Like many other Italian foods, the best Mascarpone cheese comes directly from Italy. However, it you’re an Italian food lover making Tiramisu at home, there are plenty of makers of Mascarpone cheese in America.

The next ingredient is Zabaglione cream. This is a true classic Italian food dessert. It hails from the world renowned kitchens of Venice. When it originally became a popular Italian food dessert it was made with yolks, honey, and a sweet Cyprus wine. However, today the cream has taken on a new flavor. To begin with sugar is substituted for the original honey. The most stated difference in taste though, comes from the use of Marsala wine instead of the sweet Cyprus wine. This cream can be made from home and is easier to make than most Italian food chefs let on.

The third ingredient is the most distinctive factor of Tiramisu, espresso. This shot of caffeine is where the dessert gets its name, which means “pick me up”. This is a coffee that is true to Italian food and is much stronger than American coffee. Espresso is the most important coffee in Italian food and can be seen following many Italian meals.

The fourth and final ingredient is Ladyfingers. These popular cookies originated in Italy and have made numerous appearances in not only Italian food, but in many other national cuisines. These cookies are remarkably light due to the fact that the dough with which they are made is rich with whipped egg white. They are immensely popular and one of the most appreciated Italian food desserts in Italy.

These four ingredients blended together just right and topped off with chocolate make an Italian food dessert that is as popular as the individual ingredients. Make sure when you prepare this at home that you take great care in choosing the ingredients, it will really make a difference in the quality of Tiramisu. Now that you know the correct quality and the origin of the ingredients you will surely impress your friends with you Italian food knowledge.
